National Geographic Europe is airing the Warplane documentary by PBS at the moment.

This is easy the best documentary I've ever seen following the evolution of the warplane from the early beginnings right through to modern planes.

They also have the complete series on DVD in case you're not able to receive Satellite TV like NGC.
